Step 1. Heat oil in a pan over minimum heat and add spice mix 1, when they begin to pop add spice mix 2 and fry for 30 seconds.

Step 2. Add the meat or vegetables to the pan and fry for 5 minutes.

Step 3. Now add spice mix 3 and fry for 1-2 minutes.

Step 4. Add the coconut milk and simmer until meat or vegetables are cooked through..

Step 5. Stir in the ginger, lime juice and coriander leaves.

Serve with rice and naan bread
